Razor clams are harder to find because the clam is native to both the West Coast and the East Coast of the United States. The best way to use razor clams in chowder is to shuck them fresh from the shell. Easy to do using only a spoon slid along the inner shell or a paring knife. You can use this recipe as a prototype for making chowder with other raw clams, substituting 2 cups chopped fresh cherrystones or quahogs for the razor clams. For kitchen equipment, you will need a regular teaspoon, a fine-mesh strainer, a 4- to 6-quart heavy pot with a tight-fitting lid, a slotted spoon, a wooden spoon, and a ladle.
